Sago Fritters (Traditional Indian name: Sabudana Vada)

Ingredients

  • 1 Cup of Sago/Tapioca pearls soaked for 4-6 hours prior
  • 2 Medium potatoes boiled and mashed
  • ½ cup finely chopped onion
  • 1 cup peanuts
  • 1 teaspoon lemon juice
  • 2 Tablespoons chopped coriander leaves
  • 1-2 teaspoons Salt to taste
  • ½ teaspoon Paprika
  • A touch of finely chopped ginger

Instructions

  • Soak sago pearls in a bowl – use enough water to ensure that sago is fully submerged. While 6 hours is ideal, a little over 4 hours of soak time is sufficient. Drain and set aside in colander. While you are preparing the rest of the ingredients, preheat oven to 400 degrees Fahrenheit and lightly grease a baking sheet with vegetable oil.
  • Blend peanuts in food processor until coarsely ground. In a large bowl combine all ingredients including sago, mashed potatoes, onion, peanuts, lemon juice, coriander leaves, salt, paprika and ginger to form a dough-like mixture. Stir until well mixed.
  • Take a small portion of the mixture and make small balls or dumplings in the palm on your hand. Place the balls of dough on the baking sheet, lightly flattening down to form patties. Brush or spray the top of the patties with oil.
  • Bake at 400 deg for 10 minutes and then turn patties over with a spatula. Bake for an additional 10 minutes or until golden brown.
