No Chicken Salad
No Chicken Salad made with Beyond Meat’s lightly seasoned strips is an excellent portable meal for lunch, picnics and potlucks. The high protein content will keep you full all day! Going gluten-free? The vegan chicken salad also works well served over greens. Note: it seems hard to find the Beyond Meat chicken strips right now, although I saw them on Instacart. Fine to substitute another brand – just use 3 cups worth of chopped vegan chicken.

No Chicken Salad
Ingredients
- 1/2 cup diced celery
- 1/2 cup chopped apple
- 1 cup vegan mayonnaise
- Pinch of salt
- 1/2 teaspoon of pepper
- 2 tablespoons lemon juice
- 3 cups cooked vegan chicken chopped
- Chopped parsley for garnish
Instructions
- In a large bowl, toss chicken with diced celery, apples, and mayonnaise. Mix well.
- Add lemon juice, salt and pepper to taste. Garnish with parsley.
- Make pita sandwiches or plate individually on a bed of mixed greens with tomatoes.
