Vegan Recipe - Super Delish Kale Side Dish

1 bunch of kale, chopped - remove large stems and mince
1 onion, chopped
2 Tablespoons of coconut oil
1 ½ Tablespoons of ume plum vinegar
Salt and pepper to taste
1. Add the coconut oil and chopped onion to a medium skillet over medium heat. Once the onions begin to cook, reduce heat to low-med for about 5-7 minutes, stirring frequently to avoid burning.
2. When the onions are almost completely cooked, add the chopped kale stems (as the stems will need to cook longer then the kale leaves). Cook for another 3-4 minutes and then add the chopped kale leaves. Continue cooking all together for another 2-3 minutes, or until the kale leaves are slightly wilted.
3. Add the ume plum vinegar to finish the dish. Stir well for another minute to ensure the vinegar is evenly distributed. Add salt and pepper to taste. Serve hot and enjoy.
