Raw Pomegranate Museli

Thanks to Dr. Joel Fuhrman of DiseaseProof.com for sharing this easy raw vegan recipe with us! Just soak the oats overnight in pomegranate juice to soften the oats. Pomegranates are super yummy, and they are packed with Vitamin C, fiber and potassium. This recipe makes an easy raw vegan breakfast or anytime snack!
1/2 cup pomegranate juice
1/4 cup steel cut or old fashioned oats (not quick or instant)
1 apple, peeled and grated
4 raw cashews or hazelnuts, coarsely chopped
1/2 cup halved grapes
1/2 cup cubed cantaloupe
1/2 cup sliced fresh organic strawberries
1 Tablespoon currants
1 Tablespoon ground flax seeds
1. Soak oats in pomegranate juice overnight in refrigerator. Oats will absorb the liquid.
2. In the morning, combine oats with remaining ingredients.
Note: You may add or substitute any fruits according to taste.
