For a different twist on a favorite recipe, try adding 1/4 cup of lemon juice when you're adding the cooked kamut/ porcini gravy to the tempered oil. If it's too acidic for your taste, just add a bit more olive oil.

Just made this again today! This year, I left out the shallots and onion, (I'm trying to avoid them), and it was still delicious!

I loved this dish. I couldn't find Kamut Berries and ended up substituting Farro. I loved it, but not so sure about my husband. The best part is that are oodles of leftovers and I will be attending some social events that this will come in handy for.

As much as I loved the dish even more I like the fact that there were not too many ingredients that I see in other recipes. I'm not a good cook so that is very important ;)

Make this and you won't be disappointed!! To make it even easier you can buy the butternut squash already cleaned and cubed, however, it wasn't as bad as I thought the task would be and oh so good :)

Hi Judith,
I just found a few links where you can purchase kamut online: http://www.homegrownharvest.com/kamut.html and http://www.nutsonline.com/cookingbaking/grains/wheat/kamut.html

I haven't personally tried either of them (as I can get kamut at my local supermarket), but the online stores seem to be easy options if you can't find kamut locally. You could also make the above dish with quinoa or millet (adjusting the cooking times for the grains accordingly). It would have a different richness and texture compared to the kamut variation but it would still be yummy. Give it a try with one of these other ancient grains and let us know how it turns out :)

I've never heard of Kamut Berries. Does anyone know if they're available in Australia and, if so, where they can be purchased in Melbourne?
