Vegan Recipe - Creamy Whipped Topping (Dairy-Free)

This super rich and creamy dairy-free topping has become one of my favorites! It’s made from cashews and macadamia nuts. It’s delicious as a dip for fresh strawberries and also makes a fabulous topping for fruit salads or pies. YUM! Enjoy.

Ingredients

1/2 cup macadamia nuts
3/4 cup cashews
2 Tablespoons agave
1 1/2 teaspoons vanilla extract
1/2 cup of water (*May need more for your food processor)

Preparation

1. Combine all of the ingredients into your Vita-Mix, food processor or blender. Blend until smooth. (You may need to adjust the water amount based on the strength of your equipment).

2. Transfer to a glass container and store in the fridge until ready to serve. The mixture will be a thick liquid at first and will become firmer in the refrigerator once it has time to set.
Refrigerate at least one hour prior to serving.

Note: If you are using a Vita-Mix professional series, choose the "frozen dessert" setting and use the tamper to keep mixing throughout. That will give the topping more of a whipped texture.

    Another easy trick is to just buy a can of Coconut Milk (some say full-fat, but I’ve used the “light” version with no problems).

    Place in the frig at least overnight. The longer in the fridge, the more coconut solids you will get.
    (I always keep extra cans of coconut milk in the fridge)
    Open and drain the liquid – reserve for some other use (your morning smoothie, etc.)

    Whip the white coconut milk solid in your mixer. (It’s always a good idea to chill your mixing bowl and beaters for a few minutes in the freezer beforehand – but you don’t have to).

    You can add any sweetener/agave/stevia, etc….and a splash of vanilla.

    That’s it!!!! Coconut solids and your mixer!! And voila! Creamy, delicious coconut milk whipped topping!!!!

    I just made this again and added 2 Tablespoons of raw cacao powder… O-M-G – it is so amazing! Now I have chocolate raw, vegan whipped topping :)

    I have tried and this and all I can say is “Wow!” To believe that this is not a dairy based product is simply inconceivable!
