Curried Potatoes and Veggies

Indian take-out doesn’t have to take forty minutes to get to your place. In just ten minutes you can have a delicious Curried Potato lunch special. The beauty of this quick vegan dish is the use of microwaveable steam bags.  This is a great recipe for a vegan diet on a budget!

Ingredients

½ bag of 1.5lbs of Yukon Gold potatoes
2 roma tomatoes

**1 microwavable cooking and steaming bag
½ a large yellow onion
1 ½ teaspoons of your favorite curry spice
¼ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
1 ½ tablespoons of olive oil

Preparation

1. Cut potatoes, tomatoes and onion into bite-sized cubes and put them in a medium bowl. Add the salt, pepper, paprika, and curry spice. Add the olive oil and toss mixture in the bowl.

2. Transfer the contents of the bowl into the microwaveable steam bag. Follow the directions on the bag for cooking potatoes (usually 9 min in the microwave).

3. Plate and serve the warmth of this curried perfection. Enjoy!

    Thanks for catching our mistake! There isn’t any garlic in the recipe. Although you can certainly add it if you would like.
