The Belgians are known for their beer, fries, and chocolates, but they also deserve credit for inventing Speculoos. These accidentally vegan cookies are simple but addictive, with a caramel-y flavor backed with a hint of holiday spice. Now, imagine those same cookies blended with a few other vegan ingredients, then turned into a peanut butter-like spread for bread, crackers, and even celery sticks. Sounds a little weird, right? But the stuff tastes divine, and should come with a warning: Highly addictive! And a delicious nut-free peanut butter alternative!
In France and Belgium, you’ll find this delicacy at supermarket chain Carrefour, and online throughout the rest of Europe at www.sapidus.com. In the US, Lotus brand “Biscoff” spread is available online at Amazon.com and at www.biscoff.com. You’ll find the European Speculoos brand online at www.speculoos.us.
